We don’t typically pull out all the stops for a St. Patrick’s day celebration. This year will certainly be no exception as we continue to adjust to having three kids to take care of! I will probably be lucky to remember to put them in green at all this year, let alone to pull off a leprechaun trap or a corned beef dinner.
However! I did think up a fun and festive rainbow take on one of our favorite healthier treats – the fruit cone! I especially love this dessert and I feel slightly better about giving it to my kiddos, especially on the weeks we are craving dessert every single night.

For this festive version, you will need:
- Rainbow ice cream cones
- Frosting – I only had store bought buttercream on hand, but vanilla icing would probably be yummier!
- Rainbow sprinkles
- Fruit assortment – I like to use berries
- Whipped cream either homemade or store bought

Spread a line of frosting around the top of the cone. Roll the cone in the sprinkles to create an extra festive look.
Fill the cone with your choice of diced up fruit.
Top with whipped cream and more sprinkles.
And that’s it! Festive? Check! Yummy? Check! Easy? Check, Check, Check!
